Cherry-Chocolate Chip Oatmeal Cookies



Well, my cookies ain't gonna win no beauty pageants, but they sure taste mighty fine.

Actually there is nothing wrong with that cookie, but boy are there some ugly ducklings.


Ingredients

1 stick unsalted butter, softened
1/2 cup firmly packed light brown sugar
1/4 cup plus 1 Tbsp. granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup flour
1/4 tsp. bakingsoda
1/4 tsp. baking powder
1/4 tsp. salt
3/4 cup old fashioned rolled oats
3/4 cup dried sour cherries
1/2 -3/4 cup chocolate chips (I used semi-sweet..)

Pre-heat the oven to 350 and position oven rack in the center of the oven. Line the baking sheets with parchment paper.

Place the butter, brown sugar and granulated sugar in a large bowl, and use a hand mixer to blend until smooth and blended. Scrape down the bowl with a spatula. Add the egg and vanilla and blend well.

In a medium bowl, whisk together the flour, baking soda, baking powder and salt. Add to the butter mixture all at once. Blend at low speed just until there are no more patches of flour. Scrape down the bowl.

Add the oats, cherries and chocolate chips, blend on low just until combined. Stir gently a few times with the spatula to make sure there are no more patches of flour or butter lurking.

Drop by tablespoons onto the baking sheets, spacing them about 2 inches apart. Bake the cookies one sheet at a time, rotating the sheet halfway through, for 13 to 16 minutes, until the cookies are golden brown at the edges and still a bit pale in the center. Transfer to a cooling rack.


The recipe says "makes about 50 cookies" but I made about 18....... doh! But I did make them tablespoon sizes! Soo I would make them smaller next time I guess. The are really tasty though. Yum yum.
