Cheesecake Pie
This turned out so well! Cole wanted cheesecake for his birthday and I didn't want to make a huge one, so Mom gave me this recipe. It's a lot smaller and less heavy than a regular cheesecake.
crust:
1 cup graham wafer crumbs
1/4 cup melted butter
1/4 cup brown sugar
1/2 tsp cinnamon
filling:
8 oz softened cream cheese
1/2 cup sugar
1 tbsp lemon juice
1/2 tsp vanilla
pinch salt
2 eggs
topping:
1 cup sour cream
2 tbsp sugar
1/2 tsp vanilla
Mix first four ingredients and press into 9-inch pie plate and chill.
Beat cheese until fluffy, then blend in sugar, lemon juice, vanilla and salt. Add eggs, one at a time, beating well after each addition. Pour into chilled crust. and bake at 325 degrees for 25-30 minutes, until set. Combine remaining ingredients, spread on pie and bake 10 minutes longer.
Let cool, then chill (it says) but best served not terribly cold. Use cherry pie filling for slices.
It was warm when I served it and totally didn't stay in form when I dished it out, but it tasted really good! I just had another piece. I like it cold.
This is so good! I was out of graham crumbs so I crushed up a mixture of those Biscoff gingerbread cookies, some Premium Plus crackers, and a few Honey Nut Cheerios. The whole pie was awesome and the crust really turned out well.
