Cream of Broccoli Soup

We already have a broccoli soup recipe on the blog, but I think I like this one better. Leigh forwarded it to me from a long time ago!

Cream of Broccoli Soup

1 onion, coarsely chopped
1 medium carrot, sliced
1 small stalk of celery, with leaves, sliced

1 clove garlic, minced
3 cups chicken stock
1/4 cup uncooked rice
3 cups coarsely chopped broccoli
2 cups milk
1 tsp salt
pinch cayenne pepper

In large saucepan combine onion, carrot, celery, garlic and chicken stock,

Bring to boil. Add rice, cover and simmer 15 minutes or until rice is
tender. Add broccoli. Cover and simmer until broccoli is tender, about 5
minutes. Transfer to blender or food processor and puree batches. Return to saucepan. Add milk, salt and cayenne. Serve hot.
