Chorizo Potato Fry


5 brown potatoes
2 chorizo sausages
1 red pepper
half red onion
olive oil
salt
onion salt or something of that nature

Cut the potatoes into little bite size pieces and cooked them in salted water until done but not crumbly and falling apart. Drain them and let them cool in their strainer for a little while.

Meanwhile slice the onions thinly and cook in some olive or vegetable oil until tender.

Cut the chorizo into slices and then into little quarters. Add it to the frying pan (the fat will "render" and there will be orangey oil in the pan, but that's a good thing). Add the red pepper and saute along with the chorizo and onions. Add the potatoes and season with salt and pepper, and some onion salt as well if you have some. I had these in the frying pan on low for a long time - maybe a half hour, and I just gave them a stir every once in a while until it's time to eat!
