Salmon, Peas and Cream with bowties


This is something I make when I can't think of what else to make and there isn't much around the house - it's usually made out of odds and ends. I'm sure there's a legit recipe out there for this kind of thing but this is what I do...

Salmon fillets
Frozen peas (asparagus would be good too)
butter
shallot or green onion, or a bit of regular onion really finely minced
tarragon, chives, parsley
grated lemon rind
plain yogurt
lactose free ;-) whipping cream
salt and pepper

I had frozen salmon fillets - I just put them in the oven for 10 minutes or so. You could do the same with fresh fillets, or you could put them in a frying pan and cook them that way. Meanwhile...

Saute finely chopped shallot in butter in a frying pan. When they're soft, sprinkle on some tarragon, chives, parsley, lemon rind, cook for a minute or so. Add the frozen peas and stir occasionally until they're unfrozen. Pour in some cream - I hardly had any left, but you don't really even need that much. I had about 1/8 of a cup, and I probably added another couple of tbsp of 2% milk. I added a couple spoonfuls of plain yogurt to give it a bit of tang, but not much. With the butter and the cream you don't really need the pasta to be swimming in the sauce, just enough to coat the pasta.

Cook the pasta in boiling salted water. Flake the cooked salmon and add it to the pan. When the pasta is done, add that too. That's it!
