Tuna Melt Quesadillas

This is a very simple recipe.. I have had it written in my little recipe book for a long time and had never made it (I don't know where it is from). They were easy and very tasty - my only complaint is that they were a little dry. I wonder if you could add mayo to the mix? Or maybe salsa and sour cream on top after. Or just a lot more cheese! (You can see from the photo that it looks dry haha)

2 cans (170g each) tuna
2 cloves garlic, minced
2 tsp lime juice
1/2 tsp each: salt, pepper, ground cumin and coriander
4 large tortillas
3/4 cup shredded Monterey Jack cheese
1/4 cup chopped coriander (I used fresh cilantro - is this the same thing??)
1/4 cup green onions

Mix together tuna, garlic, lime juice, salt, pepper, cumin and coriander. Spoon 1/2 cup onto each tortilla half, sprinkle with cheese, fresh coriander (cilantro?) and green onion. Fold uncovered half over filling. Cook in nonstick skillet or on greased grill over med-high heat, 2-3 minutes. (I just bake & broiled them in the oven at 400 degrees).
